Episode 25: Beef and Vegetable Soup Video

Check out this quick and easy Soup Recipe that is so Hearty, full of Vegetables, and it is perfect for a Cold Day!!

2 pounds (7-8) Soup Bones, washed
2 stalks celery, chopped
2 medium onions, chopped
2 (8 oz) cans tomato sauce
1 heaping tbsp white sugar
1 heaping tbsp kosher salt
1 tsp black pepper
1 (14.5) oz can Mixed Vegetables, drain
3-4 russet potatoes, peeled, washed, and cut into chunks
1/2 pound uncooked spaghetti

Note: You can use 1 (16 oz) bag frozen mixed vegetables or fresh mixed vegetables. Add more Salt and Pepper to taste, if desired.

In a large pot of cold water, add soup bones, celery, onions, both cans tomato sauce, sugar, salt, and pepper; bring them to a boil then turn them down, cover the pot, and let it simmer for 2 hours. After 2 hours, add the potatoes and mixed vegetables, cover the pot and cook for another hour. Add Spaghetti and cook for another 15 minutes. Serve with Cornbread.
